Good to know
Some products don't tolerate freezing well. The more water-rich a
food is, the shorter it keeps: during solidification, the water
contained in the food turns into crystals that pierce its membranes.
Flavors then escape and appearance may deteriorate.
Freezing is not recommended for dairy products, eggs, salad, pasta
and potatoes.
⚠️
Warning
Some foods should not be frozen due to the risk of salmonella:
mayonnaise, cakes with egg-white icing, pastry cream and cakes
containing it, sour cream and baked egg whites.
